Drucilla’s Little Helpers - Chicken Pot Pie Cobbler

Hello and welcome to my pity party that I was having, but no one came. It’s okay because the food was not good. Instead, I’ll have a joy party and the food will be great.


I’ll tell you why I was having a pity party. I went back to Knoxville yesterday to my orthopedic doctor’s appointment. I just knew he would release me and I would be through with my therapy. Well, he didn’t. Instead, I left there with another sling on my arm that I broke back in February.


It was like this. I fell in my house last Monday. I didn’t think I was hurt. When I went to the heart doctor the next day, I told her about it. She asked if I was lightheaded, and I said yes. She said that was due to the AFib. Then on Thursday, I went to the hospital and had my heart shocked. Finally, it was back in rhythm.


Well, it seems that when I fell, I re-broke my shoulder. I am in pain but sad because I can’t drive and do some of the things I enjoy doing.


Enough about me. Let’s make some of this chicken pot pie. We’ll serve it at our joy party.

Chicken Pot Pie Cobbler


Ingredients


1 stick of butter, melted
3 cups of cooked chicken (I use rotisserie chicken)
1 12-ounce bag of frozen peas and carrots
1 (11-ounce) box of Red Lobster Cheddar Bay Biscuit Mix
1 (10.5-ounce) can of cream of chicken soup
2 cups of milk
2 cups of chicken broth


Directions


Preheat oven to 350 degrees. Melt butter in a 9x13 casserole dish.


Add your chicken on top of the butter. Do not mix.


Add the frozen peas and carrots on top of the chicken. Do not mix it.


In a separate bowl, prepare the Red Lobster Cheddar Bay Biscuit Mix with 2 cups of milk and the seasoning packet. Pour it over the chicken and vegetables. Do not mix it.


Combine the cream of chicken soup with the chicken broth and pour over the entire casserole dish. Do not mix it.


Bake for 50 to 55 minutes or until golden brown.


I went to two funerals last Friday because one was one of my high school teachers, Eugene Hunter. He was a good teacher, and we had a lot of respect for him. My condolences to his sweet wife and children.


The other funeral was Peggy Speck. She was a good friend. I didn’t get to see her much because she lived in Texas.


When I had my beauty shop, I did her mother’s hair, Maggie Mae Speck. But I went to Mrs. Speck’s house every Saturday to do it. She was not really able to travel to me, so I traveled to her.


Peggy worked for American Airlines and would bring Mrs. Speck home to Monterey in April. Then in November, she would come and get her and take her back to Texas to stay with her until time to come back home. But she usually came home every weekend or two to see her mother.


We made some wonderful memories. Isn’t that what life is all about?


Love the people that God gives you. They’re a gift that Heaven sent. Treasure every moment spent. Live and laugh and make some memories. ’Cause one day He’ll want them back.
